Guest guest Posted April 20, 2007 Report Share Posted April 20, 2007 Spicy Cheese Straws 1 1/4 cups sharp cheddar cheese, finely shredded 1/2 tsp. ground cumin 1/4 tsp. ground cayenne pepper 1 puff pastry sheet, thawed 1 tbsp. cumin seed coarse sea salt 1/4 cup of whipped egg or liquid egg substitute Prepare baking sheets with parchment paper. Preheat oven to 425 degrees. In a small bowl, toss together the cheese, ground cumin, and ground cayenne pepper. On a lightly floured surface, roll the pastry sheet into a 14 " x12 " rectangle. Brush the pastry with egg, and cut the pastry in half to form two 12 " x7 " rectangles. Sprinkle the cheese mixture over one rectangle. Turne the other rectangle over, wash side down, and place on the cheese covered rectangle. Press firmly to force out any air pockets. Roll pastry out slightly to make layers adhere. Brush the pastry with egg substitute, and sprinkle evenyly with cumin seed and coarse salt to taste. Cut into strips about 7 1/2 " x 1/2 " . Twist strips and arrange on baking sheets about 1 " apart. Press the ends onto the sheet to keep the strips twisted. Bake 10 to 12 minutes or until golden brown. Serve warm or at room temperature. Serves 8.
