Guest guest Posted April 16, 2007 Report Share Posted April 16, 2007 Plantains In Coconut Milk 4 plantains, peeled and sliced 1/4 teaspoon salt 1 teaspoon curry powder 1/2 teaspoon cinnamon 1/8 teaspoon cloves 1 1/2 cups coconut milk Combine all ingredients except coconut milk in a heavy pot. Pour in 1 c coconut milk and simmer over a low heat until the plantain is tender and milk is absorbed. Add more mil if necessary. Serve hot. Yields 4 servings.
