Guest guest Posted April 10, 2007 Report Share Posted April 10, 2007 Spiced Up Pumpkin Bars 4 eggs 1 cup oil 2 cups sugar 1 15 oz. can pumpkin 2 cups flour 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 2 teaspoons cinnamon 1/2 teaspoon cardamom (optional) 1/2 teaspoon ginger 1/2 teaspoon cloves 1/2 teaspoon nutmeg 6 ounces cream cheese, softened 3/4 stick butter or margarine 1 tablespoon milk 1 teaspoon vanilla 4 cups powdered sugar Preheat oven to 350 degrees. Mix first 4 ingredients together in a large bowl. Sift together next 9 ingredients, then add to pumpkin mixture. Mix well. Pour into greased 12x18-inch pan. Bake at 350 for 25 to 30 minutes. Beat cream cheese, butter, milk and vanilla together until soft. Add powdered sugar gradually, beating until it reaches spreading consistency. Spread on cooled bars.
