Guest guest Posted April 7, 2007 Report Share Posted April 7, 2007 Indian Spinach This vegetarian side dish is very easy to make. You can serve it with flatbreads or hot rice. It makes excellent leftovers. 2 tsps. extra virgin olive oil 1 large onion, chopped 2 tbsps. garlic, crushed 1 bunch fresh spinach or frozen that has been thawed, chopped 1 green bell pepper, chopped 3 dried red chilies 1/2 cup water 1 14 oz. package extra firm tofu, cubed 1 tsp. turmeric 2 tsps. garam masala 1 large red bell pepper, chopped into large pieces 1/4 cup heavy cream 1/4 cup chopped fresh cilantro In nonstick skillet or wok, heat 1 tsp. oil and add onion, garlic and 3 dried red chilies. Fry 2 to 3 minutes until onions begin to brown, then add spinach and green bell pepper and continue to fry until spinach is wilted. Remove chilies and set aside. Put spinach mixture in blender with water and puree until smooth. Meanwhile, heat 1 tsp. oil in skillet and add tofu cubes and fry 2 to 3 minutes. Add turmeric, garam masala* and red bell pepper and fry a few minutes more, adding a little more oil if needed. Put blended mixture back into the pan and bring to a simmer. Then add heavy cream and cook another 1 to 2 minutes on low heat. Spoon into serving dish and garnish with a wreath of fresh chopped cilantro and the 3 dried red chilies.
