Guest guest Posted March 28, 2007 Report Share Posted March 28, 2007 Lentils with Ginger and Sesame 1 cup lentils, plain brown kind, rinsed 3 cups water 1 medium onion, finely diced 1/2 medium red bell pepper, finely chopped 1 tablespoon dark sesame oil 1 teaspoon ginger, peeled and grated 1/4 teaspoon ground turmeric 1/4 teaspoon salt 1/2 teaspoon cumin seed 3/4 cup fresh salsa, use mild or hot as you like 2 tablespoons minced cilantro 4 cups cooked basmati rice Boil lentils in water (to a stew consistency) until soft; 45 minutes to 1 hour. Do not add salt. Prepare basmati rice. While they are cooking, prepare the vegetables and saut?he onion in the sesame oil until it is translucent. Add the turmeric, ginger, salt and cumin seed and cook a few minutes longer. Add the red bell pepper and stir in the salsa. Cook over low heat for 5 minutes. Mix in the cilantro and adjust salt.
