Guest guest Posted March 27, 2007 Report Share Posted March 27, 2007 Spicy Beans with Tomatoes 1 tbsp. corn or vegetable oil 1 yellow onion, chopped 3 cloves garlic, minced 2 lbs. canned black beans, rinsed and drained 2/3 cup water 1 tbsp. lemon juice 1 tbsp. lime juice 1 tomato, finely chopped 1/4 lb. canned or fresh green chilies, seeded and chopped 2 scallions, trimmed and minced 1/2 tsp. hot red pepper sauce 1/4 cup plus 2 tbsps. cilantro or parsley, minced 1/4 tsp. salt or to taste Heat oil in a heavy saucepan over medium heat. Saute onion 4 to 5 minutes or until translucent. Add garlic and saute another 2 minutes. Add beans and water and simmer about 15 minutes or until beans are very soft. Transfer to a food processor or bowl and process until smooth. Set aside to cool. Combine with remaining ingredients and pepper to taste in a non-reactive bowl. Mix thoroughly before serving.
