Guest guest Posted March 19, 2007 Report Share Posted March 19, 2007 Spicy Barbecue Sauce Seasonings: 1/2 teaspoon salt 1/4 teaspoon dried thyme 1/4 teaspoon freshly-ground black pepper 1/4 teaspoon dried oregano 1/4 teaspoon white pepper 1/4 teaspoon celery seed 1/8 teaspoon cayenne Sauce: 1 tablespoon vegetable oil 1/2 cup chopped onion 2 teaspoons minced garlic 1/2 teaspoon chopped chipotle chile 1/2 cup tomato paste 1/4 cup fresh lime juice 1/4 cup orange juice 1/4 cup tamari or soy sauce 2 tablespoons prepared mustard, preferably stone ground 1 tablespoon prepared horseradish 1/4 teaspoon hot pepper sauce 3 tablespoons maple syrup 1 teaspoon apple cider vinegar 2 to 3 drops liquid smoke to taste In small bowl, mix seasoning ingredients. Set aside. In medium skillet, heat oil over medium heat. Add onion and garlic and cook, stirring often, 1 minute. Stir in seasoning mix, chipotle chile, tomato paste and 1 cup water and cook, stirring occasionally, 5 minutes. Transfer tomato mixture to blender or food processor and process until onion begins to break down, 30 to 60 seconds. Add lime juice, orange juice, tamari, mustard, horseradish, hot pepper sauce, syrup, vinegar and liquid smoke. Process until smooth.
