Guest guest Posted March 16, 2007 Report Share Posted March 16, 2007 Spicy Potato Roti 3 potatoes, peeled 2 green chiles, chopped couple chopped scallions 1 tsp. crushed red chiles 1 tbsp. cilantro 1 1/2 tsps. mango powder ( get from middle east. mkt) 1 tsp. salt 2 tbsps. oil 5 ozs. white flour oil, for frying flour, for dusting Boil potatoes, drain and mash. Stir in the chiles, cilantro, scallions, mango powder, salt and oil. Gradually stir in the flour to form a soft dough. Divide into 6 pieces, roll out into 5 " rounds. Set aside. Heat a griddle, place a roti on the griddle, drop about 1 tsp. oil around the edges and lift them gently so the oil slips under the roti. Pour another tsp. oil onto the roti and gently turn over. When lightly browned, remove and set aside. Cook all the rolls in this way and serve hot. Serves 4. ______________________________\ ____ We won't tell.
