Spicy Lima Bean and Leek Soup

 

8 cups water

1/4 cup lentils

1/2 cup lima beans

1/4 cup wild rice

1 large leek

1/4 cup tomato sauce

4 dash hot sauce

soy sauce

 

Bring the water to a boil in a soup pot and add

lentils; simmer

covered 1/2 hour or more. Add the lima beans and cook

another 1/2 hour.

Add the rice and cook another 20 minutes. Add the

chopped green portions

of a large or 2 medium well washed leek and simmer 10

minutes. Add

the sliced white portion of the leek and the remaining

ingredients.

Simmer 15 minutes and serve. Serves 8.

Are these fresh, dry or frozen lima beans? Sound good. I'm thinking with that

1/2 hr. cook time that they are fresh or frozen probably, but wanted to make

sure. This sounds like an interesting combo. Thanks.
