Guest guest Posted February 27, 2007 Report Share Posted February 27, 2007 Spicy Ratatouille 1 tbsp. plus 1 tsp. olive oil 2 cloves garlic, crushed 1 onion, cooked, diced 2 red chilies, finely chopped 13 ozs. tofu, diced 5 ozs. mushrooms, cooked 1 large red bell pepper, cooked, diced 2 zucchini, cooked, thiinly sliced 1 medium eggplant, diced 2 2/3 cups tomato sauce 2 tsps. hot red pepper sauce 1/3 cup plus 3 tbsps. basil leaves, roughly torn Heat oil in a frying pan over a moderate heat; add garlic, onion, and chilies. Cook about 3 to 5 minutes, or until onion is transparent. Stir in tofu and vegetables; continue cooking for 8 to 10 minutes or until vegetables have softened. Add tomato sauce, hot sauce, and basil; bring to a boil. Serve with fresh pasta or bread. Serves 6. ______________________________\ ____ We won't tell.
