Guest guest Posted February 12, 2007 Report Share Posted February 12, 2007 Linguine with Mixed Greens and Sun-Dried Tomatoes 2 tablespoons olive oil 1 cup thinly sliced onion 3 cups chopped mixed greens 1/2 cup vegetable broth 1/3 cup chopped sun-dried tomatoes 2 garlic cloves, minced 1/2 teaspoon ground red pepper 4 cups hot cooked linguine 1/4 cup grated Asiago cheese Heat oil in non-stick skillet over medium-high heat. Add onion; saute 4 minutes. Add mixed greens, broth, sun-dried tomatoes, pepper, & garlic; cook 3 minutes. Add linguine; cook 2 minutes or until thoroughly heated. Sprinkle with cheese; toss well.
