Guest guest Posted February 10, 2007 Report Share Posted February 10, 2007 Cucumbers with Lime-Chili Dressing 3 3/4 cups kirby cucumbers, sliced 1/4 in thick 2 green onions, including tops, thinly sliced 2 tbsps. bottled chili sauce 1 tbsp. + 1 tsp. lime juice 2 tsps. reduced-sodium soy sauce 1/2 tsp. sugar 1/4 tsp. ground ginger 1/4 tsp. hot red pepper sauce In a medium-size bowl, combine the cucumbers and green onions. In a small bowl, whisk together the chili sauce, lime juice, soy sauce, sugar, ginger, and red pepper sauce. Pour the dressing over the cucumbers and toss to coat.
