Cucumbers with Lime-Chili Dressing

 

3 3/4 cups kirby cucumbers, sliced 1/4 in thick

2 green onions, including tops, thinly sliced

2 tbsps. bottled chili sauce

1 tbsp. + 1 tsp. lime juice

2 tsps. reduced-sodium soy sauce

1/2 tsp. sugar

1/4 tsp. ground ginger

1/4 tsp. hot red pepper sauce

 

In a medium-size bowl, combine the cucumbers and green onions. In a small bowl,

whisk together the chili sauce, lime juice, soy sauce, sugar, ginger, and red

pepper sauce. Pour the dressing over the cucumbers and toss to coat. Serve with

broiled fish or baked or broiled tofu.

Makes 4 servings.
