Title: Mango And Jasmine Rice Salad

Categories: Salad/Dressing

Yield: 4 Servings

 

1 c Jasmine Rice

1/4 c Extra-Virgin Olive Oil

3 T Lime Juice,Or More To Taste

1 T Fresh Jalapeno Chile,Minced

- Or More To Taste

1/2 t Salt

1 c Mango,Peeled And Diced

1/4 c Red Onion,Diced

1/4 c Cilantro,Chopped

Cucumbers,Sliced, Optional

Tomato,Wedges. Optional

 

Cook Rice according to package directions. Let stand, uncoverred,

until cooled.

 

Meanwhile whisk olive oil, lime juice, jalapeno and salt until blended.

Add to rice. Add Mango, red onion and cilantro. Toss to blend and serve

at room temperature.

 

Garnish the salad with sliced cucumbers and wedges of tomato.
