Fresh Corn & Tabouleh Salad

 

1/2 cup fresh lime juice

1/4 cup tequila

1/2 cup orange juice

1/2 cup chopped fresh cilantro

1 jalapeno pepper, chopped

1/2 tablespoon chili powder

2 cloves garlic, minced

salt and pepper to taste

8 portabello mushrooms, stems removed

 

Mix all the ingredients except the portabellos in a

mixing bowl and pour into a large zip lock bag & add

the mushrooms. Seal and marinate overnight. Prepare

the BBQ, grill to medium heat & brush the grill rack

with oil. Grill the mushrooms until cooked through,

turning occasionally about 8 to 10 minutes. Transfer

to a platter.
