Guest guest Posted January 21, 2007 Report Share Posted January 21, 2007 Spiced Red Cabbage 1/2 head red cabbage, diced 1 tart apple, quartered 1/2 cup chopped onion 3 tablespoons tarragon or red wine vinegar 1 tablespoon olive or vegetable oil 1 tablespoon sugar 1 bay leaf 1 teaspoon salt, optional 1/2 teaspoon ground cloves 1/4 teaspoon pepper Place cabbage in a large kettle of boiling salted water; boil 1 minute. Drain. Return to kettle; stir in apple, onion, tarragon or red wine vinegar, oil, sugar, bay leaf, salt, ground cloves and pepper. Cover and simmer for 1 hour or until cabbage is tender.
