Guest guest Posted January 4, 2007 Report Share Posted January 4, 2007 Roasted Delicata with Red Chili & Lime Butter 2 delicata squash, 1 1/2 pounds 3 tablespoons soft unsalted butter 1 tablespoon fresh lime juice 1 teaspoon chili powder salt and freshly ground black pepper Preheat oven to 350 degrees. Cut each squash in half lengthwise and scrape out seeds. Place cut side down in a 9x13-inch baking dish and add water to a depth of about 1/4 inch. Bake until squash is tender when pierced, about 20 minutes. In a small bowl, blend butter, lime juice and chili powder. Season to taste with salt and pepper.
