Guest guest Posted November 25, 2006 Report Share Posted November 25, 2006 ITALIAN STUFFED MUSHROOMS 1 lb. medium whole fresh mushrooms 2 T butter 1/4 C chopped green onion 1/4 C chopped red bell pepper 1-1/2 C soft bread crumbs 2 tsp. Italian seasoning 1/2 tsp. garlic powder 1/4 tsp. salt 1/4 tsp. pepper butter flavor cooking spray grated Parmesan cheese marinara sauce *Preheat oven to 350 degrees. *Remove stems from mushrooms and chop finely to measure 1/3 C. Set mushroom caps aside. *Melt 2 T butter in medium skillet over medium high heat. Cook chopped mushroom stems, onion and bell pepper in butter about 3 minutes, till onions are soft. Remove from heat. Stir in bread crumbs, Italian seasoning, garlic powder, salt and pepper. Fill mushroom caps with bread crumb mixture. *Spray a 9 X 13 X 2 inch baking pan with cooking spray and place mushrooms in pan. Sprinkle with cheese and bake 15 minutes. *Change oven control to broil. Broil mushrooms with tops 3-4 " from heat until tops are light brown. *Serve hot with marinara sauce for dipping.
