Guest guest Posted November 24, 2006 Report Share Posted November 24, 2006 Spicy Fruit Muffins 2 cups flour 3 teaspoons baking powder 1 teaspoon salt 1/8 teaspoon ground cloves 1/4 teaspoon nutmeg 1 cup shredded pared apple 2/3 cup brown sugar or maple syrup 1/2 cup chopped walnuts 2 eggs, beaten 2/3 cup apple juice 1/4 cup butter, melted 1 cup bran flakes Sift together flour, baking powder, salt and spices. Stir in apple, brown sugar and nuts. In a separate bowl, combine eggs, juice and butter. Stir into apple mixture just until blended. Fold in bran flakes. Pour into oiled muffin pans, filling each cup about 2/3 full. Bake at 400 degrees for 15 to 20 minutes. Makes 12 rolls. All new Mail - Get a sneak peak at messages with a handy reading pane.
