Guest guest Posted November 5, 2006 Report Share Posted November 5, 2006 Wild Rice With Spicy Pecans 1 1/2 cups water 2 bay leaves salt to taste freshly ground black pepper to taste 1 1/2 cups wild rice 3/4 cup pecan pieces 2/3 cup cranberries 2 tablespoons unsalted butter 2 to 3 tablespoons maple syrup 1/2 teaspoon cayenne pepper or to taste 1 teaspoon ground cumin 1/2 teaspoon salt to taste Combine the water, bay leaves, salt and pepper to taste in a pot with a snug-fitting lid. Bring to a boil. Add the rice, reduce to a simmer, and cook 40 to 45 minutes. Combine the remaining ingredients in a saute pan and saute over low heat until the nuts have toasted lightly. Remove from the heat and combine with the cooked wild rice. Makes 4 servings. The best gets better. See why everyone is raving about the All-new Mail.
