Guest guest Posted October 24, 2006 Report Share Posted October 24, 2006 Bloomed/Fried Spices Bhuna Masala 3 tablespoons Canola oil or ghee or their combination 1 stick cinnamon 3 whole cloves 4 green cardamom pods 2 bay leaves Heat the ghee, or oil or their combination, in a large saute pan over medium heat until hot. Add the cinnamon, clove, cardamom and bay leaves. Cook the spices until they boom- expand and release aroma, taking care not to burn them, about 1 minute. Turn off heat. Keep warm.
