FRESH TOMATO PIE

 

1 (9 inch) pie shell

7 ripe tomatoes, sliced (medium size)

1 medium sweet onion

1/4 C mayonnaise

1/3 C shredded mozzarella cheese

1/3 C grated Parmesan cheese

ground black pepper to taste

2 tsp. fresh basil

2 tsp. fresh oregano

enough olive oil

 

1. Preheat oven to 350 degrees

2. Bake pastry shell for 8-10 minutes or until browned.

3. Slice onion into skillet with olive oil. Saute until JUST soft. (rings will

fall apart easily) Place onion in the bottom of pastry shell. Slice

tomatoes

and arrange over onions. Add black pepper to taste.

4. In medium bowl, combine mozzarella, parmesan and mayonnaise. Spread

this mixture evenly over tomatoes.

5. Bake at 350 degrees for 20-25 minutes or until golden brown. Once cooked,

garnish with fresh herbs.

 

Yield 8 servings
