Guest guest Posted October 14, 2006 Report Share Posted October 14, 2006 Sweet Potato Purée with Caramelized Tomato 6 medium sweet potatoes or yams, baked 1/2 t. salt (optional) 1/2 t. Turmeric 1/4 t. paprika 1/4 t. ground ginger 1/4 t. ground nutmeg 1/4 c. orange juice 1 t. orange zest 2 T. butter 2 T. brown sugar 2 med. Roma tomatoes, seeded and diced 3 T. sliced almonds (optional) Preparation Slit the baked sweet potatoes/yams and scoop out inside. Place in a medium bowl and mash with a potato masher. Add spices, orange juice and orange zest. Whisk until ingredients are well blended. Heat butter in a medium frying pan over moderate heat. Stir in brown sugar, cook and stir until caramelized. Add the tomatoes and cook, stirring gently until softened. Add the purée and heat thoroughly. Serve and garnish with almonds if desired. Serves 6.
