Curried Lentils and Vegetables

 

3 cups water

1 1/2 cups lentils, rinsed and drained

1 cup chopped carrots

1 cup chopped onion

2/3 cup chopped celery

4 teaspoons curry powder

1 teaspoon grated fresh ginger

1/4 teaspoon ground ginger

1 clove garlic, minced

1/2 teaspoon salt

1 cup plain low-fat yogurt

1 cup chopped tomato

2 tablespoons snipped fresh parsley or cilantro

 

In large saucepan, combine water, lentils, carrot, onion, celery, curry

powder, fresh and ground ginger, garlic and salt. Bring to boil; reduce heat.

Simmer, covered 20 to 25 minutes or until lentils are tender and liquid is

absorbed.

In small bowl, stir together yogurt, tomato and parsley. Serve with lentil

mixture.

Makes 4 servings.
