Guest guest Posted October 7, 2006 Report Share Posted October 7, 2006 Curried Lentils and Vegetables 3 cups water 1 1/2 cups lentils, rinsed and drained 1 cup chopped carrots 1 cup chopped onion 2/3 cup chopped celery 4 teaspoons curry powder 1 teaspoon grated fresh ginger 1/4 teaspoon ground ginger 1 clove garlic, minced 1/2 teaspoon salt 1 cup plain low-fat yogurt 1 cup chopped tomato 2 tablespoons snipped fresh parsley or cilantro In large saucepan, combine water, lentils, carrot, onion, celery, curry powder, fresh and ground ginger, garlic and salt. Bring to boil; reduce heat. Simmer, covered 20 to 25 minutes or until lentils are tender and liquid is absorbed. In small bowl, stir together yogurt, tomato and parsley. Serve with lentil mixture.
