Indonesian Coconut and Spice Rice

This recipe got me thinking. I have been trying to find the perfect

vegan coconut cauliflower soup (yes, a little spicy too, of course) to

make for a friend and myself this upcoming weekend. My plan is to

recreate it using soy milk and coconut extract in place of the

fattening coconut milk, and to include seitan chunks for protein.

Anyone have a good tried-and-true that fits this bill?
