Guest guest Posted October 4, 2006 Report Share Posted October 4, 2006 Spicy Stuffed Okra 3/4 lb. fresh okra, whole 1 tbsp. coriander, ground 1 tbsp. cumin, ground 2 tsps. lemon juice 1/4 tsp. cayenne pepper 1/2 tsp. salt black pepper 1 small onion, halved lengthwise, cut crosswise into fine, half rings 6 tbsps. vegetable oil Rinse okra and pat dry. Trim. In a small bowl, mix together the coriander, cumin, lemon juice, cayenne, salt and black pepper. One at a time, holding the okra in one hand, make a long slit in it using a sharp knife, don't go right through the pod, leave 1/4 " at either end. Press the stuffing into the slit. Stuff all the okra pods this way. Over a medium-high heat, heat the oil in a frying pan large enough to hold the okra in a single layer. Put in the onion, stir fry until it just begins to brown. Put in the okra in a single layer, reduce heat to medium-low. Okra should cook slowly, uncovered. Gently turn the pods until all sides are golden, very lightly browned, about 15 minutes. Cover pan, reduce heat to low and simmer for 5 minutes. Makes 6 servings. Be smarter than spam.
