Guest guest Posted October 4, 2006 Report Share Posted October 4, 2006 Smoked Salmon Salad Sandwiches 1/4 cup mayonnaise (low-fat works fine) 1/4 cup sour cream (non-fat works fine) 1 tablespoon garlic chives, chopped 1 teaspoon fresh dill foliage, chopped 1 teaspoon fresh flat Italian parsley foliage, chopped 1/4 teaspoon kosher salt (optional) 1 cup smoked salmon, skinned and flaked 6-8 sugar snap or snow peas, finely sliced 4 green onions, finely sliced 8 slices sourdough or rye bread 1 cup mixed greens (young lettuces, arugula and/or radicchio) 1/2 red or sweet onion, thinly sliced Combine first five ingredients and let sit for 10 minutes to meld. Add salt to taste if desired. Stir in fish, peas and green onions and blend gently. Spread bread slices with 1 to 2 tablespoons salad mixture, topping with greens and onion slices.
