Guest guest Posted September 19, 2006 Report Share Posted September 19, 2006 Roasted Potato Paprikish 1 pound Yukon gold potatoes 2 tablespoons vegetable oil 1 teaspoon hot Hungarian paprika 3/4 teaspoon salt 1/2 teaspoon granulated garlic 1/2 teaspoon dill weed Preheat oven to 500 degrees. Bring a quart of water to a boil. Peel potatoes, if desired, and cut into 2-inch chunks. Add potatoes to boiling water and cook for 10 minutes, until softened but still firm. Drain well. Arrange in a baking dish just large enough to hold potatoes in a single layer. Combine oil with paprika, salt, garlic and dill weed. Pour over potatoes and toss well to coat. Roast in oven for 10 minutes. Stir potatoes and roast 10 minutes longer. Sprinkle with additional salt and freshly ground pepper, if desired, and serve hot. Yield 2 to 3 servings.
