Guest guest Posted September 18, 2006 Report Share Posted September 18, 2006 Tunisian-Style Chard and Garbanzos 2 lbs. chard, roughly chopped 5 large cloves garlic, pressed or mashed 2 tbsps. tomato paste 2 tsps. ground coriander 1/2 tsp. salt or to taste 1/4 tsp. dried red chili flakes or to taste 2 tbsps. olive oil 1 cup minced onion 2 cans 14 ozs. each garbanzo beans lemon wedges (optional) Place a steaming rack over a large pot of boiling water, over medium high heat. Steam chard until tender, about 5 minutes. Lift out rack with the chard and set it aside to drain. In a small bowl, combine garlic, tomato paste, coriander, salt and chili flakes. Stir to mix well and set aside. In a large skillet, heat oil over medium heat and saute onion until pale and golden, about 7 minutes. Add tomato mixture and mix well. Add chard and garbanzos with liquid. Stir to distribute ingredients evenly and continue cooking until bubbling and heated through, about 10 minutes. Makes 8 servings. The best gets better.
