Corn Tortilla's 1/2 large onion 3 cloves garlic 1 can vegetarian refried beans 1 can black beans drained about 1 cup frozen corn defrosted some tomato paste salsa 1 TBS chili powder, 1/2 TBS cumin powder red pepper flakes to taste Cheese To soften the corn tortillas rub some water on both sides of the tortilla with you finger and then bake in foil at 350 for about 10 minutes. Saute onion until translucent, add garlic and saute, add corn stir around add chili powder, cumin powder and red pepper flakes. Stir to coat the veggies. Add the refried beans and the black beans cook until heated thru. Mix the tomato paste or sauce with the salsa. Spay the pan with some non stick spray Spread some of the salsa mix in the bottom of the pan layer the tortilla's in the pan Spread some more salsa mixture over tortilla's. Spread bean mixture over salsa Add cheese over bean mixture the repeat. You should end with tortilla's on the top. Spread with salsa and bake covered with foil for about 30 minutes. Uncover and spread some cheese over the top. Bake until cheese is melted. Let stand 5 to 10 minutes before cutting. Eat and enjoy.
