Crumbles, 1 c. soyrizo or 1/2 cup of TVP (will be 1 cup when reconstituted) 1 1/2 tsp. chili powder 1/2 tsp. cumin 1/4 tsp. garlic powder 1 tsp. salt (or add to taste) 1 tsp. black pepper 1 can (6 oz.) tomatoes, chopped 8 lasagna noodles, cooked and drained 2 c. sm. curd cottage cheese 1 c. Monterey Jack cheese with peppers 1 egg, beaten 1/2 c. cheddar cheese 2 c. shredded lettuce 1/2 c. chopped tomatoes 1 1/2 to 2 c. tomato sauce 3 green onions, chopped, including tops 1/4 c. sliced black olives (optional) Place Crumbles, soyrizo or reconstituted TVP in sauce pan and add chili powder, cumin, garlic, salt, pepper, tomato sauce and tomatoes; heat to a boil and simmer 10 mins. . Cover bottom of a 13 x 9 x 2 inch baking dish with four lasagna noodle. Combine cottage cheese, Monterey Jack and egg. Spoon over noodles and cover with sauce. Repeat layer. Bake at 350 degrees for 30 minutes. Remove from oven, sprinkle rows of cheddar cheese, lettuce, tomato, green onions and olives, cut diagonally across the center of the casserole.
