You can roll the noodles up and lay seam side down or lay them on one of the ruffled edges, they look kind of like flowers. " Lasagna Roll Ups " 8 to 10 cooked lasagna noodles 1/2 cup chopped onions 2 cloves garlic, crushed 1 cup cooked frozen or fresh chopped spinach 1 heaping tsp. Italian seasoning 2 cups ricotta, cottage cheese or mashed firm tofu 1 cup grated parmesan cheese 1 1/2 cups shredded mozzarella cheese 1 egg slightly beaten 1/2 tsp. salt 1/2 tsp. pepper jar of your favorite spaghetti, marinara sauce or homemade sauce *optional - I usually add chopped Tofurkey Italian sausage to sauce *optional - steam 1 cup of frozen peas & carrots or mixed vegetables Brown onions and garlic in a tsp. of olive oil, add to you sauce and simmer while noodles are boiling. You can add the onions and garlic to the filling mixture instead if you like. Drain noodle and pat dry. Preheat oven to 350 degrees Combine, spinach, mixed vegetables if desired, ricotta, Italian seasoning, 3/4 cup of parmesan cheese, 1 cup of mozzarella cheese, egg, salt and pepper in medium bowl, mix well. Spread about 1/3 to 1/2 cup of mixture on each noodle and roll up. Pour a little pasta sauce on the bottom of 12 x 7 or 9 x 13 inch baking dish. Place lasagna roll ups seam side down or stand on ruffled edges in baking dish. Cover with sauce and sprinkle remaining parmesan and mozzarella over top. Bake 30 to 45 minutes, until heated through and cheese melts and turns a light golden brown. " Let the sound take you away.
