Guest guest Posted November 17, 2005 Report Share Posted November 17, 2005 Barley Vegetable Soup With Basil 1 Tbl. olive oil 1 large onion, sliced 2 cloves garlic, minced 1 large ripe tomato, chopped 1 cup grated carrots 2 ribs celery with leaves, diced 2 T. dry sherry or apple juice 1/2 cup pearl barley 5 cup vegetable broth 1 bay leaf 2 tsps.dried basil Salt and fresh-ground black pepper, to taste In a large stockpot over medium-high heat, heat oil; add onions and garlic. Cook, stirring frequently, until lightly browned. Add tomatoes, carrots and celery with leaves; cook 1 min. Add sherry or apple juice and cook 3 min, or until liquid evaporates. Add barley, broth, bay leaf, and basil. Bring to a boil, reduce heat to low, cover; simmer 35 min, stirring often, or until barley is tender. Season with salt and pepper.
