Linda tortillas and enchiladas

You're welcome Linda. I make very low fat enchiladas also. I steam the

tortillas and dip in red or green enchilada sauce, put the filling inside, roll

up and place in the baking pan. I never cook them in oil first. That is just a

lot of extra fat calories making them like that.

Sissy is my sister, I'll answer for her since she doesn't log in here very

often, and all of us steam our corn tortillas for various dishes.

We take a clean dish cloth (one used for this and not the dishes) dampen it

and lay about 6 corn tortillas inside. Put in the microwave for about 25 to 30

seconds. Microwaves vary so watch them.

Now I freeze them and then separate them with a tableknife and the ice that

forms with steam them in the mirowave, I toss about 5 frozen ones around the

microwave carousel for 45 seconds, this will also give you a nice steamed corn

tortilla.
