I steam the tortillas and dip in red or green enchilada sauce, put the filling inside, roll up and place in the baking pan. I never cook them in oil first. We take a clean dish cloth (one used for this and not the dishes) dampen it and lay about 6 corn tortillas inside. Put in the microwave for about 25 to 30 seconds. Microwaves vary so watch them. Now I freeze them and then separate them with a tableknife and the ice that forms with steam them in the mirowave, I toss about 5 frozen ones around the microwave carousel for 45 seconds, this will also give you a nice steamed corn tortilla.
