Guest guest Posted November 16, 2005 Report Share Posted November 16, 2005 Cider Pumpkin Bread I cup firmly packed brown sugar 1 cup canned pumpkin 1/2 cup canola oil 1/2 cup apple cider or apple juice (use the cider if possible) 1 egg 1 3/4 cups all purpose flour 1/2 cup whole wheat flour 3 tsps. baking powder 1 1/2 tsps. cinnamon 1/2 cup chopped nuts 1/2 cup raisins Heat oven to 350 degrees. Grease and flour a 9X5 loaf pan. In a large bowl, combine brown sugar, pumpkin, oil, apple cider and egg, mix well. In another bowl add, all purpose flour, whole wheat flour, baking powder and cinnamon. Stir to mix well. Incorporate the dry ingredients into the wet mixture, stir until just mixed. Stir in nuts and raisins. Pour into greased pan and bake for 50 to 65 minutes or until toothpick inserted into bread comes out clean. Cool 10 mins. remove from pan.
