this is also from Moosewood New Classics. my son's eyes glazed over

eating it : ). took him 2 cold glasses of milk to eat it. very, very

yummy : ). I could have skipped the cake and had just frosting : ..

 

Deep Chocolate Vegan Cake

 

1 1/2 c. white flour

1/3 c. unsweetened cocoa powder

1/2 tsp baking soda

1/2 tsp salt

1 c. sugar

1/2 c. vegetable oil

1 c. cold water or chilled brews coffee (used cold water and few

instant coffe granules)

2 tsp vanilla

2 tbsp cider vinegar

 

in medium bowl sift dry ingredients. in another bowl combine wet

ingredients EXCEPT vinegar. pour liquid ingredients into dry and mix

till blended and smooth. add vinegar and stir briefly; the baking

soda will begin to react with vinegar right away, leaving pale

swirls in batter. without wasting any time pour into greased 8 "

square pan. bake at 375 degrees 25-30 minutes. cool well and frost.

Chocolate Peanut Butter Frosting

 

2 oz unsweetened chocolate

1/4 c. peanut butter

3-4 tbsp water (I used 3)

1 tsp vanilla

1 c. powdered sugar

 

in double boiler or small heavy saucepan melt chocolate on medium

heat (I used microwave and small glass dish). while it melts, beat

together PB, water, and vanilla till smooth. beat in powdered sugar

and add melted chocolate, mixing till well blended. spread on cooled

cake.
