Chard and Rice recipe

I gave chard a whirl with this recipe and thoroughly enjoyed it.

 

Chard and Rice

 

2 cups basmati or jasmine rice

1/2 lb. chard, chopped

1 small onion, sliced

2 cloves garlic, chopped

1 lemon, sliced, including peel

1 large tomato, quartered

pinch of salt & pepper

 

Combine all of the ingredients with 4 1/2 cups of water and bring to a

boil. Cover the pan and simmer gently for 30 minutes, or until the

rice is tender.

Serves 6
