Gravel Salad recipe posting

It does look like a bowl of colorful gravel. I made this and took to a dinner

party with friends last night.

I'll be home for Thanksgiving, and I can't wait.

 

Gravel Salad

 

1 cup garbanzo beans

1 cup black beans

1 cup pinto beans or great northern white beans

1 cup cooked corn

1/2 red bell pepper chopped

1/2 cup mix of any combo of chives, parsley or cilantro chopped

1/4 cup red onion chopped

1 or 2 garlic cloves minced

1/2 jalapeno seeded and minced

3 tablespoons olive oil

1 or 2 tablespoons of red wine vinegar or balsamic vinegar

salt and pepper to taste

 

Mix all together and refrigerate.

When served place in fancy bowl with tomato slices around the edges and little

toasts or crackers on the side.
