Maple and Tarragon Sweet Potatoes 4 lbs. yams, peeled and sliced 1/4 inch thick 1/2 scant cup maple syrup 1/4 cup vegan margarine melted 1/4 orange juice 1/4 tsp. cinnamon (I use a little more) 1/2 tsp. salt 2 to 2 1/2 tsps. dried tarragon *Optional - if you have gr. cardamom, use a dash Preheat oven to 350 degrees Arrange yam slices in overlapping rows in an oiled shallow 2-qt. casserole. In a small bowl, combine the syrup, margarine, orange juice, cinnamon and salt. Pour evenly over the potatoes. Sprinkle the tarragon over the top. Cover with lid or foil and bake for 25 to 30 mins. or until tender/firm when pierced with fork. Bake another 20 mins. uncovered or until glazed and golden around the edges. / " When you see beyond yourself, then you may find, peace of mind there.
