Italian Bean Patties 1 15 ounce can of great northern or cannellini beans rinsed & drained 1 tablespoon lemon juice 1 egg 2 tablespoons of pesto sauce 1/3 cup Italian style breadcrumbs 2 tablespoons of parmesan cheese 2 tablespoons finely chopped celery 2 tablespoons finely chopped bell pepper 2 tablespoons finely chopped onion 1/4 teaspoon salt 1/4 teaspoon hot pepper sauce (Tabasco) 2 tablespoons of mayo or tartar sauce Mash beans in bowl and add lemon juice and the egg, mix well. Add remaining ingredients except the tartar sauce or mayo. Shape into 4 patties Place a little oil in a large skillet and heat over medium high heat. Brown patties for about 6 minutes on each side. I'm going to freeze one to see how that works.
