snow! and a soup recipe

I've been reading posts from those of you expecting snow. How

exciting, yes, I know it's not fun to deal with. We're looking at

tornados in Tn right now. Here is a favorite hearty soup recipe

for snowy weather or whenever!

Brown Rice Asparagus soup

3/4 c brown rice

1/4 c wild rice

1 bunch steamed asparagus chopped into 1 inch pieces

1 T olive oil

2 celery stalks, chopped

1 carrot, chopped

6 c veg stock

1 T chopped parsley

1/2 onion chopped

1 T soy sauce

1/2 t pepper sauce

 

1. Bring 3 cups of water to a boil and add rice., reduce heat,

cover and simmer until water is absorbed.

2. Cook celery, carrots, and onion in a large pot with olive oil.

3. Add veg stock and rice. Bring to a boil.

4. Remove from heat, cool slightly,

5. Transfer small batches of soup to blender and blend until smooth.

6. Return all soup to pot with asparagus and remaining ingrdients.

7. Return to a simmer, unitl heated throroughly.
