Golden Beet and Potato Salad 1 lb golden beets (after tops removed) 1 lb red potatoes 2 tbls. sour cream 2 tbls.mayonnaise 1 tbl. rice vinegar 2 tbls. chopped parsley 1 tbl. prepared horseradish 1 garlic clove minced salt and pepper 8 ounces watercress Cut ends off beets, peel and quarter. Steam until tender and cool. Boil potatoes with skins on, until tender and cool. Meanwhile whisk together the sour cream, mayo, vinegar, onion, garlic, parsley, horseradish, and season to taste with salt & pepper. Coarsely dice potatoes with skins on and beets. Toss with dressing. Line a bowl with the watercress and place the beet potato salad in center. Sprinkle paprika across the top. Injustice anywhere is a threat to justice everywhere.
