Cranberry Chocolate Nut Cookies 1 cup vegetable shortening 1 cup sugar 1 tsp vanilla 1 egg 2 cups flour 1 tsp baking powder 1/2 tsp salt 2 cups fresh or frozen cranberries, finely chopped 1 1/3 cups semi sweet chocolate bits, melted 1 1/4 cups chopped nuts Using electric mixer, beat shortening and sugar till light and fluffy. Add vanilla and egg, mix well. Combine flour, baking powder and salt in separate bowl; add to shortening mixture, mixing until a soft dough forms. Stir in cranberries Drop by rounded teaspoonfuls onto greased cookie sheets. Bake 350° for 10 minutes or till golden. Cool on wire rack Dip half of cookie into melted chocolate and then nuts.
