Shiitake Mushroom Vegetable Broth recipe posting

This is from my " Angel Foods Cookbook " by Cherie Soria

I use this as my vegetarble broth in many recipes.

 

SHIITAKE MUSHROOM VEGETABLE BROTH

 

1 onion peeled, quartered

2 cloves of garlic, peeled and quartered

1 bunch fresh parsley, including stems

2 stalks celery with leaves, sliced

6 dried shiitake mushrooms

2 quarts of purified water

 

Combine all ingredients in a heavy pot

and bring to a boil. Reduce heat and simmer for 1 hour.

Strain vegetables from broth and discard.

Store broth in an airtight container in the refrigerator for

use in soups, gravies, and sauces. Will keep one week.

 

Makes 1 1/2 quarts of broth
