Guest guest Posted November 13, 2005 Report Share Posted November 13, 2005 My favorite Hummus Sun-Dried Tomato Hummus 1 1/2 cups chickpeas, drained 1/3 to 1/2 cup tahini 3 tablespoons fresh lemon juice 2 tablespoons sun-driend tomatoes, soaked and coarsely chopped 2 tablespoons water 2 or 3 cloves garlic, chopped 1/2 teaspoon salt In a blender or food precessor combine chickpeas, tahini, lemon juice, tomatoes, water, garlic and salt. Blend until smooth. Taste to adjust seasoning. I spread this on small cut pieces of celery or serve as a spread on mini toasts. Or serve with pita chips.
