One is practically vegan because he had to eat all non-fat and his son was a vegan already so it was easier at meal times. There is a lot of crap info out there telling diabetics they can't survive on a vegetarian diet because the veg diet has too much carbs and not enough protein. i am so glad you are learning differently on your own and have the goal to spread the word to others. Bravo! Bron, i know getting the tastebuds for sushi can take time. It did with me when i first tried it i was like, ew gross. i was not used to the sweetish rice vinegar used to season the sushi rice. But now i love it. My favorite rolls are: ~ Shinko: just a piece of pickled sweet raddish wrapped in rice and nori. ~ Cashew Broccoli: slightly steamed crisp broccoli with chopped cashews wrapped in rice and nori. ~ Spicy Veg Tempura Roll: tempura cooked eggplant and zucchini wrapped in rice and nori and seasoned with a fiery chili sauce. i was gonna say, Bron, i think your dh sounds wonderful, even with his illness and challenges. i personally love being around people like that.... i find their honesty refreshing and i get easily bored with people who don't shock me every once in a while. [gemini thang] Bet he is a hoot to be around.
