Guest guest Posted November 11, 2005 Report Share Posted November 11, 2005 I was reading a cookbook that said you can make a cream cheese substitute out of yogurt by straining out the whey. Place the yogut on cheesecloth or paper towels over night, and in the morning voila. It did mention that if the yogurt have gelatine or other conforming ingredients it will not work. To test for these put a spoon into the yogurt and take it out, if the spot stays it has it...this is outta memory, I hope I rememeber it right!! Guest guest Posted November 11, 2005 Report Share Posted November 11, 2005 --- Nicole, we love yogurt " cheese " here : ). we usually use a few layers of natural coffee filters in a drainer over a bowl. the whey is good as liquid in baked goods--it adds some sweetness--kids like it best in bluebery pancakes. we also like it with fresh berries and a little sugar. we have used Dannon Natural in the past but haven't bought it since becoming vegetarian so I'm not sure if it is or not but it was sure good at the time : ). take care : )..........
