Balsamic Onions In a medium saucepan combine 2 large red or white onions cut into 8 wedges. Trim the core so they will separate. Add 4 sprigs of fresh thyme and 1 tablespoons of olive or canola oil. Season with salt and pepper, and toss to combine. Cover and cook over medium-low heat, stirring occasionally until onions release their mositure, about 30 minutes. Reduce heat to low, leave cover on and cook until golden, stirring occasionally about 10 minutes. Stir in 1 tablespoon of balsamic vinegar and cook until syrupy, 1 to 2 more minutes.
