Guest guest Posted November 8, 2005 Report Share Posted November 8, 2005 Teresa, I wasn't sure if you wanted entrees or what - so here are two of our favorite desserts Vegan Chocolate Pudding 1.5 cups of soymilk 3 tablespoons of cornstarch 1/4 cup of maple syrup (or 1/4 teaspoon of vanilla 1/4 cup cocoa powder (we use Ahlaska - dairy free - its a dark chocolate and tastes like it too) Whisk all ingredients in saucepan over medium heat constantly till pudding thickens. Pour into bowl and let cool. Place plastic wrap on top so a " skin " doesn't form on top. Makes 3 servings ********************************************* Apple Crisp 2-3 large apples, peeled, cored and sliced sugar and cinnamon to taste Topping: 1.5 c flour (all-purpose, wheat, etc) 1/2 cup of brown sugar 1 stick of Earth Balance " butter " bars Toss the apple slices with sugar and cinnamon to taste - you could also add allspice or nutmeg. In a large bowl, combine flour, brown sugar and " butter " with a pastry blender or fork till a corse meal texture is obtained. Pour apples into a 9x11 inch glass baking dish and spread on the topping to cover the apples. You can dab a bit more " butter " on the top if preferred. Bake in 350 degree oven for 30 mins. Enjoy!
