Guest guest Posted November 8, 2005 Report Share Posted November 8, 2005 This is always accepted with big smiles and I usually make two of them.Avocado Pie1 1/2 cups Mexican salsa in mild,medium or hot2 large ripe avocados1 envelope of ranch style dressing mix2 teaspoons of lemon juice1/2 cup sour cream1/2 cup mayonnaise1 bunch of green onions chopped, include the tops1 4 ounce can of chopped black olives1 cup shredded Jack cheese1/4 cup chopped cilantro or parsleyTortilla chips for servingPlace salsa in a colander to drain.Cut avocados in half and remove pits, scoop avocados into medium bowl. Mash with a fork until fairly smooth. Add ranch dressing mix and lemon juice and stir to blend well.In a small bowl mix sour cream and mayo.To assemble, spread mashed avocado on bottom of an 8 inch glass pie plate.With a spatula, cover evenly with sour cream mixture. Spread drained salsa over the sour cream mixture. Cover with green onions, then chopped olives, then Jack cheese. Sprinkle cilantro or parsley over top.Refrigerator one hour or more before serving.Serve with a bowl of tortilla chips. Samantha Lea <saml wrote:Where is the avocado pie recipe? Layer: Chopped lettuce Refried beans Mix of salsa, cheddar & cream cheese Then sprinkle chopped tomatoes, chopped onions and whatever else you wish - olives are good over the top. Put dollops of sour cream on top. Serve with tortilla chips. Its wonderful - however some people do ask if the cream cheese, salsa & cheddar layer has tuna in it. Does kind of have that appearance.
